I know, I know.... It's been a while. In my defense, this is our first totally FREE weekend in a while. So I spent all day today cleaning the house, doing laundry, taking naps, drinking tea, and the always-therapeutic cooking. Today I wanted my hubby to come home from work (yuck for weekends working) to a delicious smelling apartment. He loves the Tonys boxes of Jambalaya and Red Beans and Rice, mostly because they are easy but also because they are tasty. However, I thought I could do better. What isn't better from scratch and with love, right? So after much searching and much review-reading, I found a recipe to go with. I must say... It was a home run! The beans tasted so fresh and the seasonings were perfect. I found the recipe at:

I followed the recipe exactly for Michael's portion, but for my veggie-friendly portion I took out what I wanted before adding the sausage and kept it warm in the oven. I must say, after letting the sausage simmer with the beans our kitchen smelled pretty darn good (which means a lot coming from someone who doesn't like meat!). I served this with some white cornbread, which adds a little sweetness and starchiness to absorb the mild heat of the beans. Even Mila approved... But considering she eats anything she can fit in her mouth I didn't look into it too much :) Now the Oscars are about to start (my vote for best dressed: Jennifer Lawrence) so I am going to put up the leftovers and chill out :) Happy cooking!
